Why Is Pappy Van Winkle So Rare and Expensive?
Every fall, the same thing happens. The Van Winkle family announces its annual release, bourbon fans collectively lose their minds, and the internet fills with the same question: why is Pappy Van Winkle so hard to get, and why does it cost so much?
The short answer: there's very little of it, it takes a very long time to make, and an enormous number of people want it.
The long answer is a lot more interesting, and it explains why Pappy has held its status as America's most coveted bourbon for more than a decade.
1. It takes 10 to 23 years to make
Most bourbon on store shelves is between four and eight years old. The youngest Van Winkle bottle, Old Rip Van Winkle 10 Year, is a decade old. Pappy 23 went into its barrel more than two decades before it reached a bottle.
That means every bottle of Pappy released this year was planned when the bourbon world looked completely different. The whiskey in a 2026 Pappy 23 was distilled in the early 2000s, back when bourbon was far less popular and nobody was camping outside liquor stores. No one can go back in time and make more of it. Supply today was locked in years ago.
2. The angels drink a lot of it
As bourbon ages, some of it evaporates through the wood. Distillers call this the "angel's share," and in Kentucky's hot summers and cold winters, the angels are thirsty.
A young barrel loses a few percent a year. Over 15, 20 or 23 years, that adds up fast. By the time a barrel is old enough to become Pappy 20 or 23, a large portion of the original whiskey has disappeared into the warehouse air. Some very old barrels give back only a fraction of what went in.
So even when a barrel makes it to 23 years, it yields far fewer bottles than it would have at 10.
3. Most barrels don't make the cut
Aging bourbon for two decades is risky. Leave the wrong barrel too long and it becomes harsh, bitter and overly woody. Only barrels that age gracefully are chosen for Van Winkle, and each year the Van Winkle family and Buffalo Trace's master distiller taste and hand-select the barrels for every expression.
The older the whiskey, the smaller the pool of barrels that qualify. That's a big reason why Pappy 20 and Pappy 23 are rarer than Pappy 15, which is rarer than Lot B 12. For a closer look at how the ages compare, see our Pappy 15 vs. 20 vs. 23 breakdown.
4. It's released once a year in small amounts
The Van Winkle collection comes out once a year, in the fall, and the total release is tiny compared with the demand. Bottles are spread across the entire country through distributors, and most liquor stores receive only a handful, if any.
Many retailers use lotteries, waitlists or loyalty programs to decide who gets a bottle. Restaurants and bars receive allocations too, and some of those bottles never leave the building. For the average bourbon fan, walking into a store and spotting Pappy on the shelf is about as likely as finding a winning lottery ticket on the sidewalk.
5. A wheated bourbon with a legendary reputation
Scarcity alone doesn't create a legend. The whiskey has to be great, and Pappy is.
Van Winkle bourbons are "wheaters," meaning wheat replaces rye as the secondary grain. That gives them a soft, sweet, rounded profile that's incredibly easy to love. Pappy built its reputation in the 1990s, when Pappy 20 earned a near-perfect score from a major spirits competition and bourbon critics started paying attention.
The family history adds to the mystique. Julian "Pappy" Van Winkle Sr. opened the Stitzel-Weller distillery in 1935, and his grandson Julian III kept the family's whiskey alive through the lean years before partnering with Buffalo Trace in 2002. That kind of story is hard to manufacture. Read more in our Complete Pappy Van Winkle Guide.
6. Pop culture made it famous
In the 2000s and 2010s, Pappy became a status symbol far beyond bourbon circles. Celebrity chefs praised it, it appeared on TV shows and in magazines, and it became the bottle people bought to celebrate promotions, weddings and big wins.
It even got its own crime story. In 2013, roughly 65 cases of Pappy were stolen from Buffalo Trace, a heist the press nicknamed "Pappygate." The story made national headlines and only added to the bottle's legend. When people are stealing a whiskey, you know it's in demand.
7. Collectors keep bottles off the market
Many people who get a bottle of Pappy never open it. They store it, display it, or hold it as a collectible. Older releases, especially bottles with whiskey from the original Stitzel-Weller distillery, have become prized collector's items in their own right.
Bottles like the Pappy 23 Year 2013 Stitzel-Weller, the Pappy 23 Year 1998 Gold Wax Green Glass and the Old Rip Van Winkle 25 Year can't be made again. Each one opened leaves fewer in the world.
8. The real price is set by demand
The Van Winkle family sets a suggested retail price for each bottle, but very few bottles ever trade at that number. With demand far exceeding supply every year, the price you'll actually see is set by the market, the same way rare watches, sneakers and vintage wines work.
That's also why Pappy is one of the very few bourbons whose prices have stayed strong even when the broader bourbon market cools. The family has warned for years about counterfeit bottles, which brings us to the most important point.
9. Counterfeits make trust essential
Whenever a product is this valuable, fakes follow. Counterfeit Pappy, refilled bottles and tampered seals have all been reported over the years. That's why where you buy matters as much as what you buy.
Whiskey Caviar specializes in sourcing rare and allocated bottles through trusted channels, so you can buy Pappy with confidence instead of gambling on a stranger online. Browse the full Pappy Van Winkle collection or our wider rare spirits collection.
So, is Pappy Van Winkle worth it?
It depends on what you want from the bottle.
If you want to taste a legend, yes. Pappy is genuinely excellent bourbon, and there's nothing quite like pouring a glass you've heard about for years. Pappy 15 is the classic choice; Lot B 12 is the most approachable.
If you're celebrating something big, absolutely. A graduation, a wedding, a retirement, a new business: few bottles say "this moment matters" like Pappy. Add a custom message through our engraving service and it becomes a keepsake.
If you're building a collection, Pappy is the cornerstone. The Pappy Van Winkle Complete Family Vertical Bundle puts the whole family on your shelf at once.
If you want something similar for everyday drinking, look at the W.L. Weller collection. Weller shares Pappy's wheated heritage and is made at the same distillery, which is why fans call it "the poor man's Pappy."

Frequently asked questions
Why is Pappy Van Winkle so hard to find? It's aged 10 to 23 years, much of the whiskey evaporates during aging, only the best barrels are selected, and the small annual release is spread across the entire country. Demand far outpaces supply.
How much Pappy Van Winkle is made each year? The family doesn't publish exact numbers, but the annual release is very small compared with mainstream bourbons, and the older expressions are the most limited.
Why can't they just make more Pappy? They can distill more, but it won't be ready for 10 to 23 years. The supply of aged whiskey available today was set when that whiskey was distilled long ago.
Why is Pappy 23 the most expensive? It's the oldest, loses the most whiskey to evaporation, and comes from the smallest pool of barrels good enough to age that long.
Is there a bourbon similar to Pappy Van Winkle? W.L. Weller is the closest relative. It's made at Buffalo Trace with a similar wheated recipe.
When does Pappy Van Winkle come out? The Van Winkle collection is released once a year in the fall, with bottles reaching retailers in limited quantities.
